Born 4 February 1967, in Angoulême, France.
Jacques Pourcel first met Olivier Château at Michel Trama's. At that time he was commis waiter (1986). They worked together there for a year. Then, Olivier went to work for Michel Bras for a year, during which time he met Laurent Pourcel. When the three of them opened Le Jardin des Sens, Jacques and Laurent were 24, Olivier was 21.
The three partners always consult each other when important decisions need to be made, and thanks to their good relationship, these decisions have always paid off.
Today, Olivier Château heads the Pourcel group, and manages the development and the legal side of the business.
« ...Our friendship and our business relationship with Olivier Château is central to the whole adventure which this place represents: as the three musketeers were four, the duo from Le Jardin des Sens is actually a trio. Olivier is as much the spirit and soul of this place as we are. He assures its stability, like the olive tree planted in the garden here... »

An avid wine-lover through his training as sommelier, he became passionate about the wines of the Languedoc after settling in the region. Ever active and on the go, he has successfully developed a family restaurant group business around the twins' cuisine.
In 2010, he was with the Pourcel brothers, who where selected to represent the French gastronomy in the French Pavilion at Shanghai World Expo, with the 6Sens restaurant, during six months. A restaurant concept that met great success.
