








An important meal or a big occasion would be unthinkable without selecting the right wine to accompany the various dishes.
Olivier Château works with two leading wine experts when putting together the wine lists. These are Georges-Albert Aoust, Master of Wines, who lives in the heart of Burgundy country and has been helping select the very best wine estates for the past twenty years, and Jacques Cairel, wine merchant in Montpellier who selects wines from the Languedoc-Roussillon.
Together with Yannis Kherachi, the chef sommelier, they have selected an eclectic and original list, with southern wines and those from the Languedoc-Roussillon taking pride of place, but there are also those from the Rhone Valley...
There are equally a few rare wines, but also readily drinkable ones, very pleasant due to their fruitiness and youthfulness.
Wine is also available by the glass, so you can appreciate the regional diversity and the quality of local wine producers' work.
